Feel free to add mushrooms and peppers - slice and chop to your liking - the time of which to add each vegetable depends on how firm you like it cooked, I usually add mine about an hour before the sauce is ready.
You can use this method of canning to preserve anything: meats, vegetables, sauces, gravies...
